What’s tastier than a portion of juicy meatballs accompanied by a fragrant tomato salad? We choose relatively lean meat and bake it instead of frying it, thus saving several calories.

A recipe that will provide us with several proteins, important vitamins of the B complex, such as vitamin B12, as well as essential trace elements, such as zinc and selenium.

It will take 15 minutes of preparation, 10 minutes of baking. Total 25′.

Materials

Servings: 4-6

For the meatballs

  • 600 gr. ground beef brisket (we ask that they pass the ground meat through a coarse sieve once), straight from the fridge
  • 1 dry onion, grated
  • the leaves of 1/2 bunch of mint, chopped
  • 1 tsp. sweet paprika sweet
  • 1 tsp. tablespoon dry tarragon, grated
  • 1 carrot, peeled, coarsely grated
  • 1 egg white
  • 1 tsp. olive oil soup
  • 1 tsp. ouzo or vinegar soup
  • 70 gr. breadcrumbs (wholemeal)
  • salt, freshly ground pepper

For the tomato salad

  • 1/2 kilo cherry tomatoes, cut in half
  • 1 tsp. of caper soup, salted
  • 30 ml of good red wine vinegar
  • 3 cucumbers, cut into sticks
  • 2 bell peppers, thinly sliced
  • 8 Kalamon olives, coarsely chopped, pitted
  • 4-5 tsp. tablespoon fresh basil leaves, coarsely chopped
  • salt, freshly ground pepper

Procedure
Meatballs

  1. To prepare the meatballs, put all the ingredients for the meatballs and 80 ml of ice water in a deep bowl and knead with our hands for 2-3 minutes, until a fluffy mixture is formed.
  2. Line a medium baking pan with parchment paper. Shape the mixture into about 20 small meatballs, put them in the pan and leave them in the refrigerator for about 20 minutes. (If the mixture sticks to your hands during kneading and shaping, dip them in cold water and continue.)
  3. Preheat the oven to 220°C, fan mode.
  4. Bake and bake for 8-10 minutes, until the meatballs are done and golden.

Salad

  1. In a large salad bowl, mix all the ingredients.
  2. Let the salad “stand” for 20 minutes before serving. This way the flavors and aromas mix better and the salad becomes juicier.
